Preparation:
- Add coconut flour and oats to a food processor. Process into a fine powder, for about 1 minute.
- Add remaining ingredients, and process until smooth, about 1 minute.
- Using a small cookie scoop or approximately a tablespoon, form about 20-25 balls.
- Place formed balls on parchment paper on a cookie sheet.
- Refrigerate for 2 hours to firm up. Store in an airtight container in the refrigerator.
Helpful hints:
- Play around with flavors. Almond extract or orange extract works nicely too.
