Broccoli and Apple Salad

Ingredients

  • 3/4 cup low fat plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 4 cups fresh broccoli florets
  • 1 medium apple
  • 1/2 cup red onion
  • 1/4 cup fresh  parsley
  • 1/2 cup dried sweetened cranberries
  • 1/4 cup walnuts

Cooking Instructions

  1. Chop the broccoli into appropriate bite sized pieces.
  2. Peel the skin off of an apple and chop them into bite sized pieces.
  3. Chop the fresh parsley.
  4. In a large bowl whisk together the yogurt, mayonnaise, honey, vinegar and parsley.
  5. Add the remaining ingredients and coat with the yogurt mixture.
  6. Refrigerate to chill and let the flavors combine.
  7. Stir immediately before serving.
